I want to add an administrator for only one domain but not the entire account

A gave a volunteer organization a domain and hosting for that domain on my VPS. I want the volunteers to administer that one domain in addition to me. I do not want the volunteers to be able to mismanage my entire VPS account.

You can absolutely give them access to the SPanel User Interface only where they can login with the account's username and password which you set when the account was created. If you don't have the password anymore, you may reset it from the SPanel Admin Interface -> Manage Accounts -> Actions -> Change Password.
